If you consider yourself a chef, whether at home or professionally, you must get this recipe book. It is amazing on many levels of culinary artistry and taste. Provencal Fish Stew, Lobster Bisque, Crab and other Seafood Dips are just a few of the delights that will make for a joyful gathering for a couple, family and friends. I'm thrilled being able to create magnificent seafood dishes because of the clarity of the instructions and available ingredients that make perceived difficult dishes easy to create. This is a must-buy.

Fish is daunting for me to cook because I don't want to overcook or undercook. This cookbook makes it easy for someone who is not very confident in their fish skills! The coconut crab cakes were insanely delicious! I did not want them to end. They will be a staple in our house! Halibut en papillote was quick and easy for a weeknight meal with two little ones running around. I love meals with minimal prep time and this did the trick. Absolutely beautiful cookbook. This book has me eating more fish that I have ever eaten in my life. The beautiful pictures make everything look so appealing that you want to try every recipe. The recipes are easy to follow and for the most part not complicated to prepare. I especially like the Shrimp Tacos, Roasted Salmon with Orange and Beurre Blanc, Crab Louis Salad and Lemony Linguine with Shrimp and Spinach just to name a few. I do like that the recipes are for fish you can easily find in a regular grocery store and not have to go to a specialty fish market to kind it. There Is a fabulous section on sauces. The sauces could actually be served over just about anything but really great over fish. The sauce recipes are so wonderful that I would think anyone who doesn’t love fish would be sold on eating it just because of the sauces. I have tried several of the sauces but find I keep going back to the Fresh tomato Relish, grapefruit basil relish and the spicy Lemon butter. Going to buy more of these books as gifts because they are fabulous.

Are you going to find yourself looking at a whole flounder wondering what to do with it let alone eat it raw? No! No, you're not! Unless you live near a very unusual seafood market and have nothing else to do that day. But there is a lot going on in this book that is useful and everything else is a fun read. Or useful in case, you know, you find yourself stranded on a lifeboat in the middle of the ocean and someone caught a flounder. On the bottom of the ocean floor.

Fantastic recipe book for adding more veggies in with your seafood. Yes the recipes are for more advanced cooks but the book has absolute mouth watering pictures!

What did I like? The cookbook has a Mediterranean feel but I largely acknowledged the Italian dishes. That Gnocchi looked amazing as well as the lasagna. If someone served any of these gorgeous dishes to me I’d not hesitate to eat.

Would I recommend or buy? I would love a copy for my shelf! This book is for brave beginners up to culinary gods. If you have a seafood lover then this would definitely appeal to them. I enjoyed looking at the recipes and amazing photos. Five stars for a beautiful cookbook!

Apparently, I bought this book 4 years ago. (Someone seems to have made off with my copy, so I'm buying another.) It's one of my favorite, go to books for fish. I originally bought it after having the mussels in Guinness cream sauce at a friend's house. OMG! (I now grow horseradish in my garden just to have it for this recipe.) Since then, I've been working my way through various recipes for shell and fin fish and have found all of them excellent. Some are more involved than others, but all are well explained and within the realm of a reasonably decent home cook. (And, I was living in Redding, CA, when I first got this book - not exactly the gourmet food capitol of the world. Yet, ingredients were almost always available.) The recipes are also quite creative, not a rehash of usual things. The writing style is informative and humorously entertaining, in what could have been a sturm und drang about the importance of sustainability.
I highly recommend it if you love good, sustainable seafood,

Becky Selengut's "Good Fish" is focused on recipes and techniques for cooking sustainable fin fish and shellfish from the Pacific Northwest. Helpfully divided by fish type, the recipes provide thoughtful (and mouth-watering) takes on how best to emphasize the particular characteristics of the featured fish and shellfish. Some call for smoke, others for pan-roasting or grilling. These are typically straightforward recipes that are accessible to home cooks with little experience or time to spend on fussy, fancy presentations. Experienced cooks will most definitely enjoy the book as well.

Selengut's passion for things aquatic and her commitment to preserving the viability of species before they are overfished to the point of shortage are admirable; her skill and passion for cooking makes every recipe a delight. She's also funny as heck, so "Good Fish" is also an enjoyable read. It's the sort of cookbook you will actually use and come back to time and again, and deserves a place among your most treasured cookbooks.

Got this as a gift for our future daughter-in-law's bridal shower. This is a cookbook we use at least once a week. We live on the west coast and three of our sons are commercial fishermen so we like support the industry. The recipes are great and the sauces are fabulous. You need this book :).

Although the colorful pages are a bit too "disco" for my tastes, this is a superb cookery book and I recommend it to you without reservation. I have used mashed canned sardines to add depth of flavor to my cooking for many years. Now I just have to add Red Boat fish sauce...or follow one of the wondrous recipes in this book to new tastes and new lands. No, I'm not a Red Boat employee ... just a 74 years old foodie who has traveled and eaten around the world and somehow never left Asia (with a detour or two to France). In brief, I doff my own proverbial hat to the Red Hat folks and thank them for this compendium of recipes complete with really good directions. Bravo!!

I really love this cookbook. The section on the dipping sauce alone is worth the money. LoL...when you flip through the pages, all the graphics, pics, colors, recipes just jump at you all at once. It’s a loud book if that makes sense and I actually love it! The content is solid.

I bought this as a gift for one of my sons, along with a bottle of Red Boat Fish Sauce. he and his wife are both excellent cooks who love ethnic foods of all kinds, and enjoy experimenting with new foods. He uses fish sauce in Asian recipes anyway, but had never tried this one, or heard of the book. He just got it yesterday, so hasn't had a chance to use the book or the sauce yet, but is looking forward to doing so.

I’ve watched the Meateater show with my family and enjoyed the podcast for about a year. We just went on our first goose hunt and also brought the newly purchased cookbook by Mr. Rinella for my in-laws. They were laughing at us because they were sure the goose was going to taste like crap. I roasted it using the Roast Duck with Pomegranate Glaze recipe and also made the Apple, Cherry, and Sage Chutney recipe to go with it. That goose was tender, rich, medium-rare and perfectly complemented with the chutney which was aromatic and delicious. The in-laws were impressed and my level of respect and confidence in Steve Rinella as a creator of good food was raised to a whole new level. I mean the guy can talk the talk but now I know he knows his wild game cooking. Can’t wait to try more recipes. Also, I cleaned and dressed my first bird from this hunt and the instructions and pictures were very helpful. - Female hunter and cook

An amazing book. Just wow. The pictures alone are breathtaking. We used the Buffalo squirrel recipe to make a wild appetizer for our Thanksgiving dinner and it was a huge hit. Friends who were reluctant to try the neighborhood squirrels I harvested were very impressed with how they turned out and so am I. Already ordered a second one to give away.

Rinella and the Meateater crew really knocked it out of the park with this one; it *far* exceeded my expectations, and I had very high expectations. Great photography, great info on not only recipies but processing game both in the field and in the kitchen. I bought a gift for my cousin/hunting partner and a Kindle edition for myself (which makes it easier to shop for ingredients as I have the recipies on my phone in the grocery store). The photography and layout is at a level where I’m also picking up a print edition for myself just to have as a coffee table book.

If you have even a passing interest in hunting and cooking wild game this book is an absolute must-read.
